Pita od špinata

Sastojci:

  • 800 g brašna
  • 1 kašika šećera
  • 1 kašika soli
  • 1/8 svježeg kvasca
  • (5 g) 5 kašika ulja
  • 1 kašika sirćeta
  • 400-500 ml mlake vode
  • Za premazivanje 250 g omekšanog margarina 
  • 800 g špinata
  • 300-400 g sira
  • 3-4 jaja sol po ukusu malo ulja

    Od svih sastojaka za tijesto umijesite mekano tijesto i ostavite ga da odmara 15 minuta. Zatim ga podijelite na 2 dijela, jedan malo veći. Najprije razviti veći dio u tanku koru i premazati sa 100 g margarina. Kora se siječe radijalno, ali ne do sredine, a komadi se preklapaju jedan preko drugog da bi dobili okrugli oblik s nekoliko slojeva. Stavite pripremljenu koru u frižider. Ponovite postupak sa drugom korom i ostavite ih u frižideru oko 30 minuta.

    U međuvremenu pripremite punjenje. Nasjeckajte špinat i stavite ga u zagrijanu tavu s malo ulja da malo ispari. Kad je spremno, maknite s vatre, dodajte isjeckani sir, jaja i sol ako je potrebno. Uzmite prvu koru i razvaljajte je u pravougaonik, malo veći od pleha, i stavite u podmazan pleh. Ravnomjerno rasporedite punjenje po cijeloj površini. Zatim oljuštite drugu koru i stavite je na vrh. Napravite vitko s krajeva prve kore i isecite pitu na komade. Pecite u zagrijanoj rerni na 250 stepeni oko 5 minuta, a zatim smanjite na 220 i pecite dok ne porumene.
